Prior to starting Hunter’s Landing, Jackson and his wife, Norma, lived in Chase City, Virginia where he had his first restaurant venture. “I bought Hughes BBQ, and it was going really well down in booming tobacco and timber country. Not long after I bought it, we gutted it and doubled the size of the restaurant.Then Jimmy Carter got elected and everything went down. We were there seven years. “In the middle of that my father-in-law came to me and told me a of a commer- cial property coming available at the lake (Hunter’s Landing) that he wanted to con- trol, and would I be interested in running a restaurant there. ” Prior to the Chase City restaurant ven- ture, Jackson worked in state government as a counselor in a juvenile institution. “I was a radical there, making major changes in government administration and got promoted very quickly. ” Jackson has stayed involved in politics even now. He serves asTreasurer of the Fredericksburg Virginia Patriots and is an active member of the Spotsylvania County Republican Party. Jackson is also on the 56th District Republican Committee and 7th Congressional District Republican Committee serving as Vice Chair. When he’s not working with his fellow patriots, Jackson enjoys travelling with his wife, watching his two granddaughters and attending Gilboa Christian Church. LKA
